🍄 Behind the Scenes – Truffle Trouble and Treasure!

If you’ve ever visited the nursery, you’ve probably noticed the hedged rows of pines on one side and the neat rows of hazelnuts on the other. What you might not realise is that under those very trees, something quite special is going on… there’s a whole secret world of white bianchetto truffles growing quietly underground!

We have over 1,000 trees inoculated with truffle spores — it’s been years in the making, and this season, things have gone wild. Thanks to some very happy microbes and a perfect mix of weather, we’ve got big, healthy truffles forming under those roots.

The other day, the dogs were helping me out in the nursery (as they do), when suddenly – gone! Vanished. Next minute, they’re trotting back with very expensive smiles… and even more expensive truffles in their mouths! Yep, turns out they have a taste for the good stuff. So, they’ve been officially banned from unsupervised truffle sniffing until the season gets fully underway.

The frost we’ve had (9 days of solid ones!) is exactly what these truffles need to set their flavour. The aroma right now is incredible – earthy, nutty, garlicky – and the taste? Let’s just say it’s no wonder the dogs were tempted.

So, for June and July, alongside all things rhododendrons, I’ll be donning the wet-weather gear, grabbing my trusty fork, and heading out with Bess the truffle hound for our daily forage. And don’t be alarmed if you see us popping out from between the trees at the nursery – we’re not lost, we’re hunting!

We’ll also be heading to the Lyttelton Market with fresh truffles this season, so you can get your hands (and noses) on some of this delicious bounty.

🌟 A Bit About Bianchetto Truffles

These special truffles — Tuber borchii, also known as white bianchetto truffles — are native to Europe and thrive in partnership with pines and hazelnuts. Smaller than their famous Italian cousin, the white Alba truffle, they’re still absolutely packed with flavour. Their delicate white flesh develops golden marbling as they mature, and their scent? Pure heaven on a plate.
